Ingredients:
2 tbsp olive oil
1 yellow onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
1 sweet potato, peeled and diced
1 lb ground turkey
2 tbsp chili powder
¼ tsp cayenne
½ tsp salt pepper, to taste
1.5 cup chicken bone broth
1 15 oz can/jar crushed tomatoes
1 15 oz can/jar kidney beans toppings: cilantro, chopped & avocado, cubed
Directions:
Heat a large pot over medium high heat and add olive oil.
Add onions and sauté for a few minutes.
Once onions are soft, add garlic and red pepper, and sauté for a few minutes.
Add ground turkey, breaking up with a wooden spoon, and cook until no longer pink.
Add chili powder, salt, and pepper to turkey mixture.
Add chicken broth, crushed tomatoes, sweet potato, and kidney beans.
Bring to a boil then reduce heat to a simmer for 30-35 minutes with the lid off.
Enjoy with cubed avocado and chopped cilantro sprinkled on top.
