Turkey Kale Soup



Ingredients:

  • 1 lb ground turkey breast

  • 1 tbsp olive oil

  • 3 diced celery stalks

  • 1 diced yellow onion

  • 1 tbsp oregano

  • 1/2 tsp black pepper

  • 2 cups chicken broth

  • 2 cups water

  • 2 cups chopped kale

  • 2 diced carrots

  • 1 can of white beans

  • Parmesan


Directions:

  1. Cook the ground turkey in olive oil in a pot on medium heat for 3-5 minutes.

  2. Add your veggies and seasoning and cook for about 5 more minutes.

  3. Add the chicken broth and water and cook for another 15 minutes.

  4. Top with shaved Parmesan cheese. Enjoy!
