Ingredients:
• 2 Tbsp olive oil
• 1 yellow onion, chopped
• 2 cloves garlic, minced
• 2 carrots, peeled and chopped
• 3 stalks celery, chopped
• 4 cups vegetable broth
• 1 can cannellini beans
• 1 tsp cumin
• 1/2 tsp salt
• pepper, to taste
• 5 cups spinach
• lemon juice
Directions:
1. In a large pot, heat olive oil over medium heat.
2. Add onions and sauté for 5 minutes.
3. Add garlic and sauté another minute.
4. Add carrots and celery and sauté for 5 minutes.
5. Add vegetable broth, cannellini beans, cumin, salt, and pepper.
6. Bring to a boil, then cover and lower to a simmer for 20 minutes.
7. Add spinach and stir until wilted. Squeeze lemon juice into soup. Enjoy!
