Ingredients:
For the salad:
◦ 1 head of romaine chopped
◦ 1/4 cup corn
◦ 1/4 cup black beans
◦ 1/2 avocado diced
◦ 1/4 cup red pepper diced
◦ Cilantro for garnish
For the dressing:
◦ 2 tablespoons unsweetened greek or dairy-free yogurt
◦ 1 tablespoon avocado mayo
◦ 1 - 2 cloves garlic, minced
◦ 1 teaspoon chili lime seasoning
◦ 1 tablespoon lime juice
◦ 1 -2 tablespoons of water for consistency
◦ Salt and pepper to taste
Directions:
For the salad:
1. Combine all ingredients in a bowl besides cilantro.
2. Garnish with cilantro.
For the dressing:
1. Add your yogurt and mayo to a bowl and whisk together.
2. Add in the garlic, chili lime seasoning, and lime juice and whisk together.
3. Add in water until the dressing is the consistency you’d like and whisk together.
4. Add salt and pepper to taste, pour on top of your salad and enjoy! (For extra protein add grilled chicken, shrimp, or a fried egg 😉)
