Ingredients:
-4 cups rolled oats
-1 cup almonds
-1/2 cup pumpkin seeds
-1/2 tsp cinnamon
-pinch salt
-3/4 cup peanut butter
-2 small ripe bananas
-1/3 cup maple syrup
-1/4 cup coconut oil
-2 tsp vanilla extract
Directions:
Preheat oven to 275 degrees F. Line a baking sheet with parchment paper.
In a large bowl mix the oats, almonds, pumpkin seeds, cinnamon, and salt.
In a pot, warm coconut oil, maple syrup and vanilla extract. Mash bananas and measure nut butter.
Combine the wet ingredients with the oat mixture. Toss and mix to coat well.
Using your hands, make small clusters of the mixture. Spread them out evenly on the baking sheet.
Bake for 15-20 minutes, keeping an eye out for browning.
Remove from oven. Let cool for 15-20 minutes to let the clusters start to harden.
Store in an airtight container on the counter for up to 2 weeks. Enjoy alone as a snack or in your morning yogurt bowl!
