Ingredients:
1 cup orzo
2 cups bone broth
3 cloves garlic, minced
1 shallot, chopped
1 lemon, 1/2 juiced & 1/2 sliced
1/4 tsp salt
pepper, to taste
2 cups broccoli, chopped
2 salmon fillets (6 oz each)
olive oil, drizzled
parsley, chopped, to garnish
Directions:
Preheat oven to 375 degrees.
In a baking dish, add orzo, bone broth, garlic, shallot, lemon juice, salt, and pepper, and mix together.
Cover and cook for 15 minutes.
Remove baking dish from the oven, and toss in the orzo and broccoli.
Pat salmon dry. Add salmon fillets on top of orzo, and drizzle with olive oil. Then top with salt, pepper, and lemon slices.
Cook uncovered for an additional 15 minutes.
Top with parsley.
