Ingredients:
3 large garlic cloves, finely chopped
1 Tbsp olive oil
4-5 anchovies (optional)
1 bunch broccoli rabe, roughly chopped
broccoli, cut into florets
mushrooms such as enoki or maitake
basil
pasta of your choice, such as lentil, chickpea, brown rice
salt
pepper
red chili flakes
parmesan (optional)
lemon zest
lemon juice
pasta water
Directions:
Bring a large pot of water to boil. Season with kosher salt.
In a large pan, heat olive oil. Add garlic, anchovies, and red chili flakes. Sauté for a couple of minutes.
Add mushrooms and sauté until golden. Then add broccoli rabe, basil, salt, and pepper. Sauté until broccoli rabe is cooked through.
Once water is boiling, add pasta. Before it is done cooking, add broccoli florets to the pot and blanche for 2 minutes. Reserve some pasta water into a bowl.
Drain pasta and broccoli into a colander and add to the pan.
Add lemon zest, lemon juice, some pasta water, and parmesan. Toss well.
Taste and adjust for seasoning.
