Go Greek Salmon Bowl



Ingredients:

  • 1 cup mixed greens

  • 2 cups arugula

  • roasted zetsy herb salmon (recipe here)

  • 1/4 cup grape tomatoes

  • 1/4 cup yellow bell pepper, chopped

  • 1 Tbsp red onion, chopped

  • 2 Tbsp feta, or dairy-free cheese (optional)

  • 1/2 small avocado

  • greek vinaigrette (recipe here)

Directions:

  1. Preheat the oven to 375 degrees F.

  2. Combine the ingredients for the roasted zesty herb salmon marinade (recipe here), or salmon marinade of your choosing.

  3. Place salmon in the oven and cook for approximately 10-15 minutes (until fish is flakey).

  4. While the salmon is roasting, prepare the rest of your ingredients. Slice the avocado and tomatoes, chop the bell pepper and onion, and crumble the feta.

  5. Place all of the ingredients in a large bowl.

  6. In a small bowl, prepare the greek vinaigrette (recipe here), or your dressing of choice.

  7. Top the bowl with the salmon and vinaigrette. Enjoy!
