Ingredients:
5 Tbsp greek yogurt
1 medium cucumber, peeled and grated
2 Tbsp fresh dill, chopped
1 1/2 Tbsp extra virgin olive oil
2 garlic cloves, minced
half of a lemon juice
salt, to taste
Directions:
Peel and grate the cucumber and sprinkle a pinch of salt to it. Let it rest for about 10 minutes.
Using a cheesecloth or a cloth napkin, spoon the grated cucumber into it and squeeze it to remove as much moisture as possible.
In a small bowl, mix the greek yogurt with the garlic cloves, extra virgin olive oil, and lemon juice. Stir until combined. Once combined, add the grated cucumber.
Using a sharp knife, chop the fresh dill and then add it to the yogurt mixture. Stir until combined.
