Ingredients:
⁃ 1 Tbsp sesame oil
⁃ 1 lb ground chicken
⁃ 1 shallot, diced
⁃ 2 cloves garlic, minced
⁃ 1 jalapeño, diced (optional)
⁃ 1 inch ginger, minced
⁃ 3 Tbsp coconut aminos
⁃ 1 Tbsp rice vinegar
⁃ 1/4 tsp salt
⁃ 1 lime, juiced
⁃ scallions, diced to garnish
⁃ sesame seeds, to garnish
⁃ lettuce of choice (butter, romaine, iceberg)
Directions:
1. Heat oil in large pan over medium heat. Add shallot and cook for a few minutes.
2. Add in garlic, jalapeño and ginger, and cook for another minute.
3. Add ground chicken and break up with a wooden spoon. Increase heat to medium high. Cook until no longer pink.
4. Combine coconut aminos, rice vinegar, and salt. Add to pan.
5. Remove from heat and squeeze lime juice on top.
6. Add chicken mixture to lettuce cups. Garnish with scallions and sesame seeds. Enjoy!
