Ingredients:
• 1 cup oat flour
• 1 cup almond flour
• 1/4 tsp salt
• 1 tsp baking powder
• 1/2 tsp baking soda
• 2 eggs, beaten
• 1/3 cup maple syrup
• 1 teaspoon vanilla extract
• 1/2 cup almond milk
• 2 Tbsp olive oil
• 2 Tbsp lemon juice
• 1 Tbsp lemon zest
• 1 cup fresh or frozen blueberries
Directions:
1. Preheat the oven to 375°F and line with baking cups.
2. In a large bowl, whisk together the oat flour, almond flour, baking powder, baking soda, and salt.
3. In a medium bowl, whisk together the almond milk, maple syrup, olive oil, lemon zest, lemon juice, and vanilla extract.
4. Combine the wet and dry ingredients.
5. Gently fold in the blueberries with a spatula.
6. Evenly divide the batter in the muffin tin, and bake for 20-22 minutes, or until fully cooked. Enjoy!
