Ingredients:
1 (15-oz) can black beans
1/2 cup canned corn
Handful of arugula
Juice of 1 lime
1 bell pepper, chopped
1/2 red onion, chopped
2 tbsp cilantro, chopped
2 tbsp EVOO
1/4 cup apple cider vinegar
Salt and pepper to taste
Feta cheese
Directions:
Drain can of black beans and corn and add full can of black beans to a large bowl with corn.
Add in diced bell pepper, onion, and arugula.
In a small bowl combine lime juice, apple cider vinegar, and EVOO and stir until somewhat combined.
Pour mixture on top of greens, add salt and pepper to taste and stir together. Top with feta cheese.
