Ingredients:
3 medium beets
1 garlic clove
½ cup plain coconut yogurt (or yogurt of choice)
3 tablespoons olive oil
1 teaspoon maple syrup
1 teaspoon lemon juice
sea salt
Directions:
Preheat oven to 350F.
Cut beets into thin slices. Toss with 1 tbsp olive oil and place on parchment-lined baking sheet (can leave skin on or remove).
Bake for 1 hour, then remove from oven and allow to cool slightly.
Place beets and all additional ingredients in a food processor or blender and combine.
Serve with a sprinkle of sea salt, crackers and crudite.
