Ingredients:
1 large heirloom tomato, chopped
10 cherry tomatoes
1 red or orange bell pepper, chopped
1/2 cucumber, peeled & chopped
3 sprigs fresh mint, parsley, chives
juice of 1/4 lemon
drop of red wine vinegar
drop of extra virgin olive oil
2 pinches of truffle salt
dash of cayenne pepper
dash of black pepper
handful of ice
To serve:
avocado, diced
cherry tomatoes, sliced
toasted pine nuts
fresh basil, chopped
extra virgin olive oil
apple cider vinegar
truffle salt
black pepper
Directions:
Add all soup ingredients to a blender.
Blend for 60-120 seconds.
Pour into bowl.
Top with fresh basil and black pepper.
Serve with avocado, cherry tomatoes, toasted pine nuts and basil tossed in olive oil, apple cider vinegar, truffle salt + black pepper.
