Ingredients:
1/4 purple cabbage, grated
1/4 green cabbage, grated
2 large carrots, grated
2 Tbsp fresh mint, chopped
2 Tbsp fresh dill, chopped
2 Tbsp fresh parsley, chopped
2 Tbsp raisins
3 Tbsp sunflower or pumpkin seeds, toasted
1/4 cup EVOO
juice of 3/4 lemon
1 clove garlic, minced
dash of cinnamon
dash of cumin
dash of honey
black pepper
Directions:
Mix EVOO, lemon juice, cinnamon, cumin, honey, garlic and black pepper in a glass to make dressing. Set aside.
Add cabbage, carrots, raisins, mint, dill and parsley into a bowl. Pour dressing on top and toss.
Toast seeds in a pan over low heat for 3 minutes. Sprinkle over salad and serve immediately. Enjoy!
