Ingredients (4 servings):
Wet:
5 organic eggs
2 ripe bananas
¾ cup organic pumpkin puree
¾ cup almond milk (I use unsweetened vanilla)
2 Tbsp coconut oil
Dry:
½ cup almond flour
½ cup coconut flour
1 Tbsp pumpkin pie spice
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon baking soda
Toppings:
peanut butter
egg, fried
cherry tomatoes, sliced
maple syrup, as desired
Directions:
Preheat waffle iron and spray with coconut oil.
Combine all wet ingredients in a blender and blend until smooth.
Add dry ingredients to blender and blend until combined.
Pour batter into waffle iron. Cook waffles to desired doneness (usually take about 5 minutes).
Smear waffles with peanut butter, top with 1 fried egg and warmed maple syrup. Serve with a side of sliced tomatoes. Enjoy!
